    • 4 cups water
    • 1/2 cup jaggery, grated or crushed

  3. Drain the soaked rice and add it to the jaggery water. Add a pinch of salt.

4 - Jaggery Coffee

Ingredients:

  • 1/2 cup raw rice
  • 1/4 cup moong dal (split yellow lentils)
  • 1 cup  jaggery, grated or crushed
  • 3 cups water
  • 1 cup milk
  • 4 tablespoons ghee
  • 10-12 cashew nuts
  • 1 tablespoon raisins
  • 1/2 teaspoon cardamom powder

Instructions:

  1. Rinse 1/2 cup of raw rice and 1/4 cup of moong dal under running water. Drain and set aside.
  2. In a pressure cooker, combine the rinsed rice and dal with 3 cups of water. Pressure cook for about 3-4 whistles on medium heat or until soft and mushy.
  3. In a separate pan, melt the grated jaggery with a little water to form a syrup. Strain to remove any impurities and set aside.
  4. Mash the cooked rice and dal mixture well add the jaggery syrup to the mashed rice-dal mixture and mix well.
  5. Place the pressure cooker back on the stove and add 1 cup of milk, cardamom powder, and saffron strands (if using). 
  6. In a small pan, heat 2 tablespoons of ghee and roast cashew nuts and raisins until golden brown. Add them to the pongal mixture and mix well.
  7. Simmer the mixture on low heat for a few minutes until it reaches the desired consistency, stirring occasionally.
  8. Turn off the heat and transfer the Chakkara Pongal to a serving bowl.

5 - Jaggery and Banana Pancakes

Ingredients:

  • 1 ripe banana, mashed
